What we need

We are currently seeking an

Executive Chef,

whose exceptional leadership skills will contribute to our organisation’s mission and the further development of our culinary team.

The incumbent will be reporting to the Director, Food & Beverage and must exemplify and positively influence the kitchen culture as set by company standards. By managing and supervising the work carried out by the team they will ensure good relations with guests in delivering our mantra of “Leave Your Troubles Behind”.

You will support the elevation of our culture through the lens of our pillars: The best in wellness | The feeling of somewhere else | A trouble-free experience | In a natural state.

What you’ll do

Management Activities: planning, organization and control

Define the quantitative and qualitative needs for products and foods and verify orders;

Ensure the quality of food preparation or culinary activities of multiple kitchens and restaurants;

Ensure compliance with sanitation and hygiene practices to ensure that employees follow standards and regulations;

Ensure the planning, preparation, follow-up and control of the department’s budget;

Establish, implement and enforce departmental and corporate policies and procedures;

Carry out daily inspections of kitchen facilities and ensure compliance with occupational hygiene, sanitation, health and safety standards;

Actively seek and obtain feedback on food quality, service quality, and handling guests problems and complaints;

Perform other related duties.

Leadership and collaboration

Lead and support the mentorship and development of kitchen leaders;

Determine priorities, workloads and work schedules to meet operational and financial objectives;

Ensure recruitment, selection, training, development and onboarding of employees;

Manage staff performance evaluations based on the evaluation program in place;

Ensure supervision of staff in order to maintain a work climate conducive to the retention, mobilization and professional growth of personnel;

Be creative and foster collaboration while leading the design of new recipes, menu plans and plate presentation;

Innovate and stay current with food and beverage trends;

Promote collaboration and sharing of information with the food service team;

Promote employee engagement to ensure established standards are met or exceeded;

Establish and maintain relationships with suppliers and other industry partners.

Profile needed

Diploma in culinary studies or institutional culinary diploma or equivalent;

Minimum of ten (10) years of experience in the culinary industry and two (2) years of experience in leading a culinary team as Executive Chef;

Red Seal Certification;

Food handling certificate;

Accreditation in food hygiene and safety;

Knowledge of the Microsoft suite;

Ability to maintain good relationships with suppliers, guests and employees;

Great ability to lead and motivate a team;

Autonomy and strong organisational skills;

Strong communications and mentorship skills;

Agile and strong problem solving abilities;

Resistance to stress and sense of urgency.
