Located at 45 Curtain Road the property will see a phased transformation of the 120-bedrooms and 14 Suites, as well as the hotel’s street-level lobby lounge and café. The hotel's offering also includes the vibrant Spanish restaurant BiBo by renowned chef Dani Garcia. Guests further benefit from access to the rooftop bar, swimming pool, Marlin’s Mediterranean restaurant, gym, and treatment rooms that form a sophisticated private members’ club sanctuary run by Blue Marlin Ibiza.
Your Mission:

To take the lead as the F&B Manager at Virgin Hotels, where you'll manage and drive our Food & Beverage operations with hands-on, service-oriented leadership. You'll bring energy, motivation, and commitment to deliver outstanding, experience-led service while achieving excellent financial results. Your role will involve making strategic and inclusive management decisions in collaboration with all stakeholders, ensuring effective communication and fostering productive relationships both internally and externally. With direct reports including the Head Chefs, Outlets Managers, and Events Manager, you'll ensure the success of our F&B operations. This role requires a primary shift pattern of evenings and weekends to provide active, on-the-ground leadership.
The Nitty-Gritty:
What exactly you will be doing…
Operational accountability for the financial performance of all Outlets and Events Spaces.
Create an experience-led dining and bar environment through your team that ensures every guest leaves feeling better.
Ensure opening, preparation, service, and closing standards of the bars, kitchen, and restaurant meet company standards and policies.
Lead the restaurant, kitchen, and bar teams by example.
Own and direct the restaurant and bar management teams during key trading periods.
Proactively analyze service and financial developments, driving focused business performance.
Encourage and support your managers to focus on revenue growth opportunities that enhance our guests' dining and bar experience.
Support the Chefs and build positive working relationships with the Chef Management team.
Ensure there are adequate resources and systems in place to operate the outlets efficiently.
Establish clear service objectives with your management team and set measurable and relevant goals.
Ensure correct staffing levels are established to provide consistently outstanding levels of guest service.
Identify operational issues, establish causes, and take inclusive action to remedy them.
Take ownership of financial and operational issues, working to find lasting quality solutions.
Promote a culture of guest ownership in all F&B areas.
Delegate tasks to key managers to encourage personal development while retaining accountability and responsibility for quality control.
Attend all briefings and departmental meetings as required, contributing and cascading information to the team.
Work with the Sales, Reservations, and Marketing team to obtain the best results for F&B operations.
Strive to deliver the perfect dining experience in the restaurant and bars with your managers and team.
Deal with and recover all complaints to ensure our guests leave wanting to recommend us.
Continually evaluate service performance and challenge yourself and the team to step up.
Manage and deliver all company KPIs and incentives through great communication, coaching, follow-up, and supporting the restaurant and bar teams.
Achieve set payroll targets, F&B margins, and profit and loss targets through effective planning and proactive management control systems.
Create and develop action plans to deliver the required results when objectives and targets are missed.
Ensure the use of MICROS and cash handling procedures meet company standards.
Adhere to and complete all daily, weekly, and monthly administration procedures on time.
Background must-haves
Current, legal and unrestricted ability to work in the UK
High school equivalent or education required
Minimum 1-2 years of previous F&B Management hotel experience
Ability to clearly and pleasantly communicate in English with clients, guests, suppliers, teammates/management, in person, in writing and on the telephone
Proficient in MS Outlook, Word, Excel and PowerPoint
