Production Manager
to oversee the smooth and efficient running of the bread and pastry operation at this high-end artisanal wholesale bakery. Responsible for delivering the production plan efficiently to the highest quality standards, whilst always ensuring compliance with Good Manufacturing Practices and Health & Safety Regulations. Shift Pattern:
Monday to Friday. Core Working hours: 2 days a week - 8am to 5pm & 3 days a week - 12am to 9pm. Every day is different at The Bertinet Bakery, but here are some of the things you will be doing: Oversee daily production planning, ensuring recipes are followed for consistent product quality. Source ingredients, supplies, and packaging within budget and agreed parameters. Implement new products operationally, updating inventory and developing artisan baking skills among bakers through training. Ensure that bakery facilities and all related equipment are maintained in good working order and regularly serviced, to ensure smooth and efficient operations. Address Food Safety, Health & Safety, and SALSA concerns proactively. Oversee cleanliness, including regular deep cleaning of bakery facilities. Lead the production team, including bakers, pastry chefs, hygiene operatives, and packers. Handle staffing needs, including recruitment, performance management, and rota planning. Manage productivity and budget expectations, including overtime. Bring your expertise as a seasoned Baker and mastery in the art of Artisan Baking. With hands-on experience in the heart of a bustling bakery, you've honed your craft to perfection, turning flour, water, and passion into culinary masterpieces. Minimum Requirements: Relevant experience managing a production team/unit of around 20.
