THE ROLE: Reporting to the Finance Director, you'll: Oversee all duties carried out by F&B control department Assist outlet head chefs in costing all dishes / menus Ensure all beverage selling prices are achieving correct GPs Cost Cocktail menus Work with sommeliers to ensure optimal pricing on menus Ensure we are using the most economical supplier Maintain the POS back of house system Work closely with managers to ensure all controls are adhered to Carry out Cellar audits and weekly cellar counts of all outlets Assist with supplier price comparisons Oversee beverage stock and cellar manager system Manage the Procure Wizard system - creating mini markets, adding products, managing users Authorise beverage orders on Procure Wizard Reconcile monthly statements F&B suppliers Liaise with supplier's accounts contacts Update revenue and spend figures on Flash Food documents Identify issues with dishes / produce and address with Exec Chef Track food wastage Oversee daily stock counts of high value food items.
